However, PyCharm doesn't provide an ability to state "use stable" or "use nightly" for the plugin that I can find.

Downloading the "stable" release github-copilot-intellij-1.5.35-241.zip from https://plugins.jetbrains.com/plugin/17718-github-copilot will not install on the version of PyCharm with:

Plugin 'GitHub Copilot' (version '1.5.35-241') is not compatible with the current version of the IDE, because it requires build 241.* or older but the current build is PY-243.24978.54
